  • 1/4 cup granulated sugar (for filling)
  • 1 large egg yolk
  • 1 tsp vanilla extract (for filling)
  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup granulated sugar (for streusel)
  • 1/4 cup unsalted butter (cold and cubed)
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set this dry mixture aside.
  3. In another bowl, mix the softened butter, eggs, milk, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Be careful not to overmix.
  4. For the cream cheese filling, beat the softened cream cheese with 1/4 cup of sugar until smooth. Add in the egg yolk and 1 teaspoon of vanilla extract, mixing until fully incorporated.
  5. To prepare the streusel topping, combine 1/2 cup of flour, 1/2 cup of sugar, and 1 teaspoon of cinnamon in a small bowl. Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  6. Pour half of the prepared cake batter into the greased baking pan, spreading it evenly. Dollop spoonfuls of the cream cheese filling over the batter, then gently spread it out. Pour the remaining cake batter over the cream cheese layer and spread it evenly again.
