Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- 1/2 cup brown sugar (for streusel topping)
- 1/4 cup all-purpose flour (for streusel topping)
- 1/4 cup (1/2 stick) unsalted butter, melted (for streusel topping)
- 1 tsp ground cinnamon (for streusel topping)
Instructions
- Prep Muffin Tin: Preheat your oven to 375°F (190°C). Grease a standard muffin tin or line it with paper liners.
- Make Streusel: In a small bowl, combine 1/2 cup brown sugar, 1/4 cup flour, 1/4 cup melted butter, and 1 tsp cinnamon. Mix until it resembles coarse crumbs. Set aside.
- Combine Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Dry Ingredients: In another bowl, whisk together 2 cups flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined.
- Fill Muffin Tins: Divide the batter evenly among the prepared muffin tins. Top with the reserved streusel.
- Bake and Cool: Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy: Serve warm or at room temperature. Enjoy your delicious coffee cake muffins!
