Perfect for both seasoned wild game chefs and beginners, this recipe transforms ground deer meat into a Mediterranean masterpiece.

Ingredients

Scale
  • 1 lb lean ground venison
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • Optional: Splash of red wine or balsamic vinegar for deglazing

Instructions

  • Brown the Venison: Heat olive oil in a large skillet over medium-high heat. Add the ground venison and cook until browned, breaking it up with a spatula. Avoid overcooking to keep it from becoming dry.
  • Sauté the Aromatics: Reduce heat to medium. Add the chopped onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  • Build the Mediterranean Flavors: Stir in the sun-dried tomatoes, Kalamata olives, oregano, thyme, cumin, paprika, salt, and pepper. Cook for another minute, until fragrant.
  • Deglaze (Optional): If desired, deglaze the pan with a splash of red wine or balsamic vinegar.
  • Simmer: Reduce heat to low, cover, and simmer for 10-15 minutes to allow the flavors to meld.
  • The Final Touch: Stir in the crumbled feta cheese and fresh parsley.

Notes

  • Serve with warm pita bread, roasted vegetables, or a Greek salad for a complete meal.
  • This recipe can also be stuffed into bell peppers or served over couscous for variation.
