Ingredients
  

  • 1 lb fresh or frozen scallops thawed if frozen
  • 4 tbsp unsalted butter melted
  • 3 garlic cloves minced
  • ¼ cup grated Parmesan cheese optional
  • 2 tbsp fresh parsley chopped
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pat the scallops dry with a paper towel and arrange them in a single layer in a baking dish.
  • In a bowl, mix the melted butter, minced garlic, and lemon zest. Pour over the scallops.
  • Sprinkle Parmesan cheese (if using) and season with salt and pepper.
  • Bake for 12-15 minutes, or until the scallops are opaque and tender.
  • Garnish with freshly chopped parsley and serve immediately.

Notes

  • Frozen scallops: If using frozen scallops, ensure they are fully thawed and patted dry before cooking.
  • No Parmesan? You can skip the cheese for a lighter version or substitute with Gruyère or Pecorino Romano.
  • Optional extra flavor: Add a sprinkle of panko breadcrumbs before baking for a crispy topping.
