- 1 pound ground turkey 85/15 or 90/10 fat content
- 1 medium onion diced
- 2 cloves garlic minced
- 1 bell pepper red, yellow, or orange, diced
- 1 cup chopped vegetables broccoli, zucchini, mushrooms
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ¼ teaspoon smoked paprika
- 1 14.5-ounce can diced tomatoes, undrained
- ½ cup low-sodium chicken broth
- Optional: 1/4 cup chopped fresh cilantro
- Salt and freshly ground black pepper to taste
Heat Oil: In a large skillet, heat olive oil over medium-high heat.
Sauté Onion: Add diced onion and cook for 3-4 minutes until softened and translucent.
