Ingredients
  

  • Ground Beef 80/20 blend - 2 pounds
  • Beef Casings - 1 package soaked
  • Salt - 2 teaspoons
  • Black Pepper - 1 teaspoon
  • Garlic Powder - 1 teaspoon
  • Onion Powder - 1 teaspoon
  • Paprika - 1 teaspoon for a smoky flavor, use smoked paprika
  • Cumin - ½ teaspoon
  • Coriander - ½ teaspoon
  • Mustard Powder - ½ teaspoon
  • Optional: Caraway seeds - ½ teaspoon
  • Optional: Juniper berries - ½ teaspoon ground (for a piney flavor)

Instructions
 

  • Prepare the Meat: Grind the beef using a meat grinder for a smooth texture.
  • Mix the Spices: In a large bowl, combine the ground beef with salt, black pepper, garlic powder, onion powder, paprika, cumin, coriander, and mustard powder. For added flavor, include caraway seeds or juniper berries.
  • Stuff the Casings: Attach the casings to a casing filler, slowly filling them with the meat mixture. Twist the filled casings into 6-8 inch links, being careful not to overfill.

Cook the Sausages:

  • Boiling: Bring a large pot of water to a boil, then simmer the sausages for 30-40 minutes until fully cooked.
  • Grilling/Smoking: Preheat the grill or smoker to medium heat, grilling or smoking the sausages for 20-25 minutes, turning frequently until golden brown.
  • Serve: Enjoy with traditional Polish dishes like pierogi, bigos, or golumpki, or serve as appetizers with cheese or vegetables.
