  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • ½ cup brown sugar for streusel topping
  • ¼ cup all-purpose flour for streusel topping
  • ¼ cup 1/2 stick unsalted butter, melted (for streusel topping)
  • 1 tsp ground cinnamon for streusel topping

Instructions
 

  • Prep Muffin Tin: Preheat your oven to 375°F (190°C). Grease a standard muffin tin or line it with paper liners.
  • Make Streusel: In a small bowl, combine 1/2 cup brown sugar, 1/4 cup flour, 1/4 cup melted butter, and 1 tsp cinnamon. Mix until it resembles coarse crumbs. Set aside.
  • Combine Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  • Combine Dry Ingredients: In another bowl, whisk together 2 cups flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined.
  • Fill Muffin Tins: Divide the batter evenly among the prepared muffin tins. Top with the reserved streusel.
  • Bake and Cool: Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
