Ingredients
  

  • 6 ripe tomatoes
  • 1 cucumber
  • 1 bell pepper red, yellow, or orange
  • 1 small red onion
  • 1-2 garlic cloves
  • ¼ cup high-quality olive oil
  • 2-3 tablespoons sherry vinegar or red wine vinegar
  • Salt pepper, and a touch of cumin (to taste)
  • Optional: bread for thicker consistency
  • Optional: fresh herbs like cilantro or parsley for garnish

Instructions
 

 

  • Prep vegetables: Wash and chop the tomatoes, cucumber, bell pepper, onion, and peel the garlic.
  • Blend: Combine the chopped vegetables, olive oil, vinegar, seasonings (salt, pepper, cumin) in a blender or food processor. Blend until smooth. For a thicker soup, soak the bread in water and add it to the blender.
  • Chill: Transfer the blended gazpacho to a large bowl. Adjust seasonings to taste. Cover and refrigerate for at least 2 hours.
  • Serve: Garnish with chopped vegetables like reserved cucumber, diced peppers, or fresh herbs. Add croutons and a drizzle of olive oil for extra flavor. Serve cold.

  • Peeling tomatoes: Optional, but can help achieve a smoother texture and prevent bitterness.
  • Consistency: For a chunkier texture, blend less.
  • Storage: Gazpacho can be stored in the refrigerator for up to 3 days.
